Ingredients

  • 1 tbs organic butter
  • 1 Tbs finely chopped fresh ginger
  • 2 garlic gloves
  • 12 scallops
  • 1 can coconut milk
  • 2 cups stock (bouillon)
  • 1 red pepper, thinly sliced
  • 2 spring onions thinly sliced
  • 1/2 freshly squeezed lime
  • fresh basil

Directions:
Heat butter in pan, add ginger & garlic, lightly salt scallops & add to pan, saute 2-3 mins, add coconut milk, stock,pepper & spring onions, bring to gentle boil, remove from heat stir in lime juice & add basil.
