Paleo Breakfast Bars by Elana’s Pantry

  • 1 cup almond flour (ground almonds)
  • ¼ teaspoon  sea salt
  • ¼ cup coconut oil
  • 2 tablespoons honey
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened shredded coconut
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ¼ cup blanched slivered almonds
  • ¼ cup raisins
  1. In a food processor combine almond flour and salt
  2. Pulse in coconut oil, honey, water and vanilla
  3. Pulse in coconut, pumpkin seeds, sunflower seeds, almond slivers and raisines
  4. Press dough into an 8 x 8 inch baking dish, wetting your hands with water to pat dough down
  5. Bake at 350° for 20 minutes
  6. Serve
